It definitely is to die for cake. :) A friend of mine once made a carrot cake and since then I have been dying to make one at home! Carrot cake is my favorite, and the addition of pineapple AND coconut… pretty sure this will be a little slice of heaven!
I made it today for our wedding anniversary and it was so delicious! I’m pretty sure i did everything else right but WOW it was so moist and delightful! and as much as i love cream cheese frosting, it wasn’t for any occasion so I opted for sifted powdered sugar with nutmeg… it was quick and easy. I just reduce the apple sauce to 1/2 cup oil and 1/2 cup applesauce and still taste delicious! It’s such a wonderful cake. Great recipe.
It was a big hit with my husband and family. My family thought it was the best dessert. They are now requesting it for Christmas and for it to be our special dessert for ALL special occasions. The cake itself was SO good. I loved that it had no oil and all the ingredients felt so healthy for an indulgence. The frosting was really the only “bad” part but it was so delicious.
