Flaky puff pastry is stuffed with spiced pumpkin and topped with a vanilla glaze!

You could make these with sweet potatoes for a different spin if you aren’t feeling the pumpkin. Also, I think they would be wonderful with a maple icing instead. Just add a little splash of maple extract to the icing.



Ingredients

  • 1 large egg
  • 2 teaspoons water
  • 4 sheets puff pastry
  • 1 cup canned plain pumpkin
  • 1/2 cup granulated sugar
  • 1 teaspoon pumpkin pie spice
  • coarse sugar, optional

glaze:

  • 1 cup powdered sugar
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract
