Broccoli Cheese Soup

This is an easy weeknight dinner. I came up for it because I wanted a lighter version of the classic comfort soup.

Broccoli Cheese Soup

Yield:  6 Servings

Ingredients:
  • 1 can cream of healthy request cream of chicken soup
  • 2 cups low-sodium chicken stock
  • 2 tablespoons cornstarch
  • 1 tablespoon Montreal steak seasoning
  • 1 teaspoon fresh ground black pepper
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 2 tablespoons canola oil
  • 1 small onion, finely diced
  • 1 cup grated carrots
  • 1 large bunch broccoli, cut into bite size pieces
  • 1/2 cup reduced fat shredded cheddar cheese
  • 6 tablespoons light sour cream
Directions:
  1. combine first 7 ingredients in crock pot on low setting
  2. heat oil over medium-high heat in medium size skillet. Sauté onion, carrots and broccoli until onions are translucent, about 5 minutes
  3. add veggies to crockpot, stir and cover. Cook for 3-4 hours
  4. just before serving, stir cheese into crockpot mixture until melted. After dishing into bowls, mix in 1 tablespoon of sour cream per bowl
